So good – you won’t believe it’s still keto!
INSTANT POT® KETO BANANA BREAD
- 2 cups blanched almond flour
- 2 bananas mashed
- 2 cup walnuts chopped
- 3/4 cup Swerve confectioners (or more, to taste)
- 2 teaspoons vanilla extract
- 1/2 teaspoon baking soda
- 2 teaspoons nutmeg ground
- 2 teaspoons cinnamon ground
- 1 teaspoon salt
Using an electric mixer, combine all ingredients, until a perfectly even mixture is obtained. Transfer the mixture from the bowl to a well-greased Instant Pot®–friendly pan or dish. Pour 2 cups fltered water into the inner pot of the Instant Pot® and insert the trivet. Place the pan onto the trivet and cover loosely with aluminum foil.
Close the lid, set the pressure release to Sealing, and select Manual/Pressure Cook. Set the Instant Pot® to 45 minutes on high pressure, and let cook.
Once cooked, let the pressure naturally disperse from the Instant Pot® for about 10 minutes, then carefully switch the pressure release to Venting. Open the Instant Pot® and remove the pan. Let cool, serve, and enjoy!
