Paleo Salad

to go paleo? Start with this delicious salad, which is colorful and packed with nutrition! Add on the optional creamy dressing, which adds the perfect accent to the flavor of the salad. Prep Time: 20 minutes


Serves: 1

For the salad:

  • 1 red pepper, sliced
  • 1 medium mushroom, sliced
  • Small handful coriander, chopped
  • 1 zucchini, grated
  • 2 carrots, grated
  • Large handful red cabbage, grated
  • 1 onion, sliced
  • Small piece of fresh ginger, finely sliced
  • Juice of 1 lime
  • Small handful of your favorite nuts

For the dressing:

  • 1/2 tsp honey
  • 1 tsp tamarind
  • 1 tbsp tahini
  • Juice of ½ lime
  • Small piece of fresh ginger, finely sliced
  • ½ tbsp water


  1. Add salad ingredients to a large bowl and mix.
  2. Add all of the dressing ingredients in a small bowl and mix.
  3. Stir dressing into the veggies or add on top of salad.
  4. Enjoy!
