PUMPKIN SOUP

Ingredients

  • 1 pumpkin
  • 6 cups bone broth
  • 4 tablespoons grass fed butter
  • 1 tablespoon cinnamon
  • *Add your favorite vegetables, herbs and spices

Instructions

  • Place butter in large pot, melting over low heat. Pour in bone broth, and simmer.
  • Cut up pumpkin, then remove seeds. Place in pot, and let cook. Cook time will vary, but can take up to 4 hours.
  • Once cooked, remove pumpkin from the pot, and let cool. Once cool, scoop the pumpkin out of the skin and puree in a blender.
  • Pour pureed pumpkin back into pot, and add the cinnamon. Stir thoroughly, ladle into bowls, and enjoy!
