WATERCRESS SOUP

Ingredients

  • 6 tablespoons coconut oil
  • 6 cups bone broth
  • 1 pound watercress trimmed and chopped
  • 1 tablespoon parsley
  • 1 tablespoon dried basil
  • 4 tablespoons grass fed butter
  • *Add your favorite vegetables, herbs, and spices

Instructions

  • In a large pot, melt coconut oil over low heat. Pour in bone broth, then sprinkle in basil. Stir thoroughly.
  • Mix in butter, and then the watercress Stir and let simmer. Remove from heat.
  • Puree soup in a blender, then return to pot and let simmer for 10 minutes.
  • Ladle soup into bowls, serve, and enjoy!
