CLASSIC PUMPKIN STEW

Ingredients

  • 2 quarts bone broth
  • 4 cups pumpkin puree
  • 1/2 can coconut milk
  • 1/2 teaspoon parsley
  • 1/4 teaspoon cinnamon or more, to taste
  • Add your favorite vegetables, herbs, and spices

Instructions

  • Add all ingredients (except coconut milk) into a large pot, and cook over low heat, for 40 minutes.
  • Puree in small batches, in a blender. Return to pot.
  • Cook on low, for 20 minutes, then stir in coconut milk.
  • Serve, and enjoy!
