Instant Pot® Keto Coconut Stew

INSTANT POT® KETO COCONUT STEW

Dairy-Free, Gluten-Free, Keto-Friendly

Serves about 16 people

INGREDIENTS
4 quarts bone broth
6 tablespoons coconut oil
2 jalapenos, chopped
4 cups cooked turkey, cut up
1 can coconut milk
2 tablespoons dried basil
8 tablespoons grass-fed butter
2 teaspoons cilantro
*Add your favorite spices, herbs, and vegetables

INSTANT POT® RECIPE
1. Pour all ingredients into the inner pot of the Instant Pot®.

2. Close the lid, set the pressure release to Sealing, and select Manual/Pressure Cook. Set the Instant Pot® to 5 minutes on high pressure, and let cook.

3. Once cooked, let the pressure naturally disperse from the Instant Pot® for about 10 minutes, then carefully switch the pressure release to Venting.

4. Open the Instant Pot®, serve, and enjoy!

TRADITIONAL RECIPE
1. Melt the coconut oil, in a large pot, and then pour in bone broth. Simmer, adding in the coconut milk and butter.

2. After a few minutes, add the jalapeno, turkey, basil and cilantro. Let simmer, for 10-20 minutes.

3. Serve, and enjoy!
