Watercress Soup

WATERCRESS SOUP
Serves about 6 people

INGREDIENTS
6 tablespoons coconut oil
6 cups bone broth
1 pound watercress, trimmed and chopped
1 tablespoon parsley
1 tablespoon dried basil
4 tablespoons grass fed butter
*Add your favorite vegetables, herbs, and spices

RECIPE
1. In a large pot, melt coconut oil over low heat. Pour in bone broth, then sprinkle in basil. Stir thoroughly.
2. Mix in butter, and then the watercress Stir and let simmer. Remove from heat.
3. Puree soup in a blender, then return to pot and let simmer for 10 minutes.
4. Ladle soup into bowls, serve, and enjoy!
